Pineapple Coconut Chicken

Pineapple Coconut Chicken! Wow, this one is good! Not only I get to play with my one of my favorite spices....Ginger, but one of my favorite foods....Pineapple.  You can also dub this as a all natural cough syrup. I'll tell you how later on.  Really it works! I used this while I had a terrible cough...it's Awesome!

Recipe:

4 Boneless Chicken breast
1 Pineapple
1 lemon
3inch of Ginger root
1 tsp Honey
1 Tbl of coconut oil.
2 Tbl shredded coconut

Method:

One whole pineapple pealed, discard the outer layer. Cut ALL of the fruit...yes even the hard core of the pineapple. According to Laura Flores, a San Diego-based nutritionist: the hard core of the pineapple is full of nutrition. Like high dosage of vitamin C,  manganese, and enzymes. It's that stuff that helps the body brake down proteins and turn it into energy. Put all of the cut up pineapple into a food processor. Fresh squeeze the whole lemon in to the food processor with the pineapple. Peal the ginger cut it up and place that in there as well, with the teaspoon of honey. Put the food processor on high.  Now you need a fine wire colander or a cheese cloth. Drain the liquid/cough syrup. So...the liquid is the awesome all natural cough syrup! Place the cough syrup in a mansion jar, or some sealed container, put it in the fridge. Take 2 teaspoons every 4/6 hours. 

Now the pulp, is used for your chicken. Place chicken and pulp in a frying pan with coconut oil and 2 tablespoons of  shredded coconut. Cook until your chicken reaches 160 degrees, or until you are confidant that the chicken is done!  This is supper good!

Pina Colada Cake

Ok on Pinterest I keep seeing a Pina Colada Cake. What makes the cake is the icing/topping.  The ones that are on Pinterest have the pineapple in the cake. Hmmmmm. This is my families recipe.

1 yellow cake mix
1 can of chunky pineapple drained
1 package of instant sugar free Banana pudding
1 large tub of Cool Whip/or a small box of whipping cream; whipped
1 package of coconut

Directions:

Mix up the cake according to directions. In a 13-9 in cake pan spray with cooking spray and sprinkle 1/2 cup coconut on the bottom. Pore the cake mix in the pan on top of the coconut, bake according to directions.

In a large bowl pore the Cool Whip/or Whipping Cream, mix the dry instant sugar free Banana pudding together, with drained pineapple chunks. Pore over the top of the cooled cake. Last sprinkle the rest of the coconut on top. Remember refrigerate any left overs, because of the milk.


Ok, I have forgotten to put on a tip for this cake. Tip: Instead of using veggie oil like it says on the back of the yellow cake mix box, my family and I would put in Coconut oil. By doing that it changed the texture of the cake and made it taste amazing!

FHE Activity

I was surprised that ALL of the programs was taken. The people in my ward would usually take a program, read it, and then put it back on the table after the meeting. This time there was not a program put back.  I put on a scripture chase on the program, called Scripture Cookies. The idea of this scripture chase is to look up each scripture and you will find the ingredients for Scripture Cookies. Some of the clues are subtle, so check the list of ingredients on the bottom. This is the recipe:
  • 3/4 cup "The words of his mouth were smoother than                  " (Ps 55:21)
  • 1/3 cup "Come unto me all ye ends of the earth, buy                     and honey" (2Ne 26:25)
  • 1 1/2 cups "To what purpose cometh there to me......the                         from a far country? (Jer 6:20)
  • 2 "As one gathereth            that are left, have I gathered all the earth" (Isa 10:14)
  • 2 cups "And Solomon's provision for one day was thirty measures of fine                (1 Kings 4:22)
  • 1 teaspoon "Take thou also unto thee principal spices,... and of sweet               half so much (Ex 30:23)
  • 1 teaspoon  "Ye are the              of the earth" (Matt 5:13)
  • 1/2 teaspoon "The kingdom of heaven is like unto                 (Matt13:33)
  • 3 cup "Nevertheless,....                        for the horse" (D&C 89:17)
  • 1 cup "And they gave him....two cluster of                 " (1 Sam 30:12)

  1. Beat first four ingredients together
  2. Mix in remaining ingredients
  3. Drop by teaspoonfuls onto greased cookies sheet
  4. Bake at 350 F (175 C) for 15 Minutes

Answer: Butter, Milk, Sugar, Eggs, Flour, Cinnamon, Salt, Baking Soda, Oats, and Raisins.

I did two things different to this recipe. I took out the raisins and put in chocolate chips. I am not a fan of raisins, I really hate raisins. The chocolate chips, I thought made the cookies. And I took out the Salt

Ginger and Pineapple Chicken

I've been telling people that I'll put this up on the blog for a long time. I just finally have time. This is really good, my parents loved it.

4 boneless chicken breast
2 cans of chunky pineapple
1 tablespoon of ginger or more depending of taste
3 cups of rice brown or white (I use brown)
a pinch of Frenches Onion

Method:

Combine the chicken, the juice of the pineapple and ginger. Place the pineapple chunks in a bowl. Cook the chicken in a skillet or Dutch oven until the meat thermometer reaches 160-170 degrees. Cook the rice use the directions on the box of the rice. When the chicken is done, cut up length wise, bite size if serving to children.

Put about 2 tablespoons of rice on a dinner plate. On top of rice place cut up chicken. On top of chicken put 2 tablespoons of pineapple. Than sprinkle a pinch of Frenches Onion. Place on some fresh carrots, peas, etc as a side dish, then serve for dinner. Enjoy!

Homemade Totally Nuts

I was happy when I have found this recipe on the net. My mom and I did a slightly different variation on this recipe. The original recipe is this:

1 cup granulated sugar
1/2 tsp cinnamon
1/8 tsp cream of tartar
1/4 cup hot water
1/2 tsp vanilla extract
1 1/2 cups whole toasted almonds.

  1. Preparation: Prepare a baking sheet by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
  2. In a small saucepan, combine the water, cinnamon, sugar, and cream of tartar over medium-high heat. Stir until the sugar dissolves.
  3. Continue to cook, stirring occasionally, until the mixture reaches 246 degrees on a candy thermometer.
  4. Once the mixture is at the proper temperature, remove immediately from the heat and stir in the Vanilla. Add the nuts all at once, and stir with a wooden spoon until they are completely coated with the sugar mixture. Continue to stir until it becomes difficult to stir and the syrup turns opaque.
  5. Quickly turn out onto the prepared baking sheet. Separate the nuts and allow them to cool and harden at room temperature. Nuts can be stored in an airtight container at room temperature for several weeks.

Ok, so that is the original recipe. As my mom and I found out we can and needed to do something different. This is our recipe:

1 cup of granulated sugar
1 and 1/2 tsp of ground cinnamon OR 1 and 1/2 tsp of ground cloves
1/8 tsp of cream of tartar
1/4 cup of hot water
1/2 tsp of vanilla extract
1 and 1/2 cup of whole raw almonds

Preparation:
  1. Baking sheet sprayed with nonstick cooking spray. (the aluminum foil ripped and bits of foil was sticking to the almonds. So I got rid of the foil)
  2. In a small saucepan, combine the water, cinnamon/cloves, sugar, and cream of tartar over medium-high heat. Stir until the sugar dissolves.
  3. Continue to cook, stirring occasionally, until the mixture reaches 246 degrees on a candy thermometer.
  4. Once the candy is at the proper temperature, remove immediately from the heat and stir in the vanilla. Add the nuts all at once, stir with a wooden spoon until they are completely coated with the sugar mixture. (I didn't continue to stir until the nuts became opaque the second time. The mixture cools fast and it became hard to clean the saucepan of the nuts that was stuck to the sides.)
  5. I just coated the nuts with the mixture then pour onto the baking sheet. The sugar coated nuts will still turn opaque while you are separating the nuts on the baking sheet. Cool at room temperature. Nuts can be stored in an airtight container at room temperature for several weeks.
By using ground cloves instead of ground cinnamon, creating a different unique taste. Both ways are equally good. Enjoy!

My great-aunt Glady's Butter Crunch

I was looking for this for a long time. I am so glad that my Mother found it.

Butter Crunch
1 cup chopped pecans or walnuts
1/2 cup butter
1/2 cup Margarine plus 3 tablespoons of water
1 cup sugar
1/2 semi sweet, milk chocolate chips, or dark chocolate chips (optional)

  1. Line an 8 inch square baking pan with foil.
  2. Butter or spray lightly.
  3. Cover bottom with nuts and set a side
In a heavy 2 quart saucepan or a 12 inch electric skillet combine butter, margarine, water and sugar. Place over high heat and stir constantly with a wooden spoon. The mixture will foam. Cook stirring constantly, until mixture becomes a light tan color. Do not let the mixture get brown! = come to a boil, then stir for 7 minutes.

  • Remove from heat and poor over the nuts in your 8 inch square baking pan. Spread mixture evenly over nuts. Cool at room temperature for 24 hours then brake into pieces.
  • If you choose to use chocolate chips. While the mixture is hot spread the chocolate chips of choice on top. The chocolate chips will melt. Let cool at room temperature for 24 hours then break into pieces.
  • If you want to use a dipping chocolate instead of chocolate chips. Let the mixture cool for one hour at room temperature. Then spread the melted chocolate over the candy. Let stand at room temperature for 24 hours. Then break the candy.

Ginger and Lime Marinade

I have made this marinade. It was a big hit in the family!

Ginger and Lime

2 Tablespoon of Ginger (or to the preference of your taste)
2 cup of lime

Mix the two together and then pore it over 4 pieces of pork,or chicken in a dish that you can cover. I used a zip-lock bag. Put in fridge over night. Now because of the lime juice it make the meat look like it is done. The meat won't be so you can either grill the meat, bake or fry. Just make sure that the middle of the meat reaches 160-170 degrees using a meat thermometer. The next time I use this marinade I'm going to dutch oven it, Mormon style.

My Grandpa Robb's Fish recipe.

4 Fillet Trout

aluminum foil

Lemon pepper

garlic powder

lemon juice

1- 8 oz pkg Philadelphia cream cheese

green onion

mushrooms

1 tablespoon butter (optional)

Method:

Put 1 trout on one aluminum foil wrap. Sprinkle trout with lemon pepper, garlic powder, and lemon juice to taste. Cut up 8 oz of soften cream cheese in a bowl mix cream cheese with chopped green onion, butter, and mushrooms. Put one tablespoon of cream cheese mixture on the trout. Fold aluminum foil over the trout and mixture. If barbecuing throw the wrapped trout onto the coals for 10 min. Or in the oven on 450 for 15 min or in the broiler for about 8 mins. OR cook until done. ;p Enjoy!

The cream cheese, (or any dairy), will take out the fishy taste in the fish. I promise. I hate fish, but this is the ONLY way I'll eat fish. However I eat this one in a *blue moon* because of the dairy. I'm sure that you can also use any fish, but I don't know.

Waffle Cookies

This is a fun cookie/brownie. It's fun, fast, and easy!

4 one ounce square of Unsweetened baking chocolate/or 1 Cup of coco powder.
1 cup of butter
1 1/2 cups of sugar
4 eggs
2 teaspoon vanilla extract
2 cups flour

Method:
Heat your waffle iron.
Melt together chocolate and butter in heavy sauce pan,(or you can use a glass bowl, melt in microwave on high 2 min. stir then 2 min. more.) Stir in sugar until dissolved,(I placed back in microwave for 30 seconds, it dissolved faster). Remove from heat whisk in eggs, vanilla and flour, mix until blended. Drop by teaspoonfuls onto a heated waffle iron, bake according to manufactures instructions. ( I bake mine for about 2 min.) Top with chocolate frosting, confectioners sugar, melted chocolate chips, etc. Makes about 4 dozen. Enjoy!

A Delightful Summer Desert

Blackberry Cream Pie. This Summer desert is really good, and perfect for hot Summer days.

2 8oz of cream cheese
1 16 oz or one pound of frozen whipped cream
1 10 oz of Blackberry jelly
2 9in gram cracker pie crust
Fresh Blackberry's

Method:

Mix cream cheese, whipped cream, and Blackberry jelly altogether until smooth. Put mixture in the gram cracker pie crust, (or make one big pie. I didn't buy 2 gram cracker pie crust. yeah oops) Freeze the Blackberry pie for 3 hours or more. Served with fresh Blackberry's on top.

My mom made this and a friend of hers was surprised that he coulden't smell any sugar. He was a diabetic, and was excited that he could have some, and loved it.

Thanks Giving

This year for Thanksgiving, not everyone will be home. Some of my family members will be with their in-laws, one brother will be in Afghanistan. We still pray for his safe return home. All sorts of people have asked me what my family and I will do this Thanksgiving with one brother in a war zone. "Not all of your family will be their!" My question is:

"What are we supposed to do?"

We cant change the circumstances; we will still have family, not all of us will be there. We are however, still going to calibrate how the Pilgrims survived starvation, and gave us the first building blocks of America. In Plymouth on December 22 1820 they have started a tradition called the "Five Kernels of Corn."I have also found a poem called the Five kernels of Corn

This year we are not going to do the bird. Turkey will still be on the menu. We are going to do something that my family loves. We are going to barbecue (sp?) turkey wrapped in bacon. Very good. I know it is November and we are going to barbecue. :)

Turkey breast
Smoked bacon

kabob skewers

Method:
Cut the Turkey breast into bite size pieces. Cut the Bacon horizontally. Wrap the bacon around the turkey. Put through a Kabob skewer. Place on top of grill cook until done.

All month I have seen and herd people saying how they are thankful, and what they are thankful for. For some it is to sleep in, days off, family, friends, to have a job....still, to have a home to be living in, religion, and etc. Me I am thankful when I hear from my brother, it means of course that he is still alive. So this year this Thanksgiving to me means different then past years.

Check out this Chili Recipe

First of all I was signed up to do a Chili recipe for my wards social next week. So I have found a chili recipe that called for chocolate. Yes, you have read that right, chocolate. It's good, I think I am getting better of this whole cooking thing. Here it is.

1 pound of ground beef/ground chuck
1 large onion chopped
2 cloves of garlic minced
1 32 oz of stewed tomatoes
1 29 oz of dark red kidney beans
1 46 Fl oz of spicy hot V8 vegetable juice
2 t. salt
1 t. pepper
1 1/4 t. ground cumin
1/4 t. ground Cayenne pepper
2 t. ground cinnamon
2 sq. semi-sweet baking chocolate

You can use a large Dutch Oven, but I have used a slow cooker
Brown ground chuck/beef, drain. Add onion & Garlic & saute till golden. Drain and rinse the Kidney beans, for thick chili add 2 cans of kidney beans. Add remaining ingredients and simmer on low, uncovered, for at least one hour, or until ready to serve. Best when after you let it set for 24 hours in the fridge
Sprinkle each portion with cheddar cheese if desired. Serves 8

Hot Carrots that bites back.

A couple of weeks ago I helped my mom make Hot Carrots. The original recipe has pearl onion, jalapenos, and cauliflower. Well I went out side and found some nice looking red peppers. I couldn't remember what they were. We have 5 types of peppers and of course they were not labeled. So I took three of these nice red, plump, peppers, cut them up and put them in our hot carrots mixture. After they were made and bottled, ( yes I am learning how to can), all done. My brother told me what the red peppers were. Get this; they are Santa Fe peppers. So not only do I have jalapeno peppers, but also Santa Fe Peppers. Oh yeah you bite into one one of the veggies, they will bite back! They are so good.

If interested this is the recipe, ( this is for 18 pints):

2 1/2 Cup of white vinegar
1 Cup of sugar
1/2 Cup of water
3 tabl. canning salt
1 tabl. mustard seed
1 tabl. celery seed
1/4 tsp turmeric

Combine vinegar, sugar, water, salt, mustard seed, celery seed, and turmeric. Bring to a boil.

in separate pan. 40 pearl onions, 24 jalapenos, 4 bags of baby carrots, 2 heads of cauliflower.
For perpetration of the jalapenos make sure you use gloves. ( if desired 3 Santa Fe peppers, cut)
Peel onions, cut jalapenos, and cauliflower into bite sized pieces. Cook veggies in water for 5 min.

Pack veggies into sterile jars fill with vinegar mixture in jars leaving 1/2-inch head space.
Recommended process time for boiling water caner.
Half pints or pints:
  • altitudes of 0-1,000 ft. =15 min
  • altitudes of 1,000-6,000 ft. =20 min
  • altitudes above 6,000 ft =25

Citrus Cake

I'm putting this up all because of a friend of mine. She loves this cake recipe. It is very light, moist and spongy. It's great for this time of year and summer.

Citrus Cake

1 box of lemon cake mix
1 lemon
1 lime
1 orange
1 Cream cheese frosting container

Method:
Mix the lemon cake using the directions on the back of the box. Let the Cake cool. Put the Lemon, Lime, and Orange zest on a plate. Empty the container of Cream cheese frosting in to a mixing bowl. Now cut the Lemon and Lime in half after you have shaved of the zest. Squeeze one half of Lemon, and one half of Lime into the Cream cheese frosting, mix well. Spread on top of cake after the cake has cooled. Now put the Lemon, Lime, and Orange zest on top of the frosted cake. Enjoy!!

ps: I'll let my secret out. On the lemon cake box it says to use vegetable oil. Don't. This is how to make your box cakes moist, and spongy. Instead of vegetable oil, use olive oil, or coconut oil. I like to use coconut oil. You can find that at the local health nut store.

Aebleskiver


What is an Aebleskiver? A holiday in Denmark often begins with a breakfast of puffy fried cakes called Aebleskiver. The flavorful dough may be fried with a piece of apple inserted into the center or served with apple sauce or apple butter-the cakes takes its name from it's fondness for apples. You can use whatever fruit you want it is just as good.

This Danish Aebleskiver pan is 6-12-inch diameter cast iron pan with seven round indentations. So you must season it before use and don't use soap. It will ruin the pan. To season rinse with hot water, then rub it with cooking oil then bake or put it over a medium flame until the oil starts to smoke. Keep this up after every use.

Recipe :
2 cups flour
1 tea salt
1 tea baking soda
2 cups of buttermilk
3 eggs separated

Sift together flour, salt, and baking soda. Add buttermilk and egg yolks. Beat eggs whites until light and fluffy, forming soft peaks. Gently fold egg whites into batter.

Christmas cookies

Okay as I have promised hear are the cookie that I have made this year for Christmas.

Cottage cheese cookies (that's right cottage cheese cookies very good try it )

4 c. all-purpose flour
2 Tbsp. baking powder
1 tsp. salt
1 1/2 c. powdered sugar
2 sticks butter, softened to room temperature. = 1 cup
1 (15 0z) tub of cottage cheese = about 1 3/4 cups.
2 tsp. vanilla
2 large eggs
2 Tbsp. Milk

Method:
Preheat oven to 350. Combine flour. baking powder, and salt; set aside. In a large bowl, cream butter and eggs until well blended. Add in flour mixture a little at a time until combined. Drop by the tablespoons into greased cookie sheet. Bake for 20 minutes, until lightly golden brown.

Tip:
my dad has high blood pressure so for years I have been taking out the salt in cookies and other things. Believe me with out the salt the cookies tasted better, so try these cookies with out the salt.

Glaze Topping:
1 c. powdered sugar
one orange
2 Tbsp of cream cheese

Method:
Combine powdered sugar, Orange zest, orange juice 1/2 of the orange juice. Mix until smooth. Put on cookies.

Oatmeal Cranberry white chocolate chunk cookies

1 1/3 c. butter softened
1 1/3 c. brown sugar
4 large eggs
3 c. old-fashioned oats
3 c. flour
2 teaspoon baking soda
16 ounce package craisins
16 ounce white chocolate chips

Method:
Preheat oven to 375. Using a electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy. Add eggs mixing well. Combine oats, flour, baking soda in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in craisins and white chocolate chips. Drop by rounded spoonfuls into sprayed cookie sheets. Bake for 8-10 minutes or until golden brown. Cool on wire rack Makes about 2 1/2 dozen bookies

This is what I gave to my family and friends for teats this year. The cookies are rely good. All I can say is the Cottage cheese cookies; don't knock them unless you have tried them. They are very good.

Christmas Wreathe

Hi everyone. I just need to revive the Christmas Wreath's recipe. We found out that if you half the recipe it will fit the Angle food cake pan just perfect. We also found out that the more food coloring you put in the cuter they are, we also put on different colors of gum drops on the wreath. Also you can get the red licorice rope and make a bow out of that and put in on the wreath. (we didn't do that. Did not think of it until the wreaths were done. Sorry) We also sprinkled red sugar on it. It looks way cute!

Christmas Wreaths
2 Tlb butter
20 big marshmallow's
Green food coloring
3 cups of Rice crispy
gumdrops
Red sugar sprinkles

Method:
Melt together butter and marshmallow's on med. heat. Put in green food coloring (the darker the better). Mix in 3 cups of rice crispy. Pour in to the buttered Angel food cake pan. Mold the mixture to the pan. Sprinkle on red sugar sprinkles and place on the gum drops, and the
red licorice rope (made into a bow). Let set up and enjoy!!!!

Christmas goodies

Ok everyone loves my family's recipes. People keep asking us for them. So now I'll tell put up the recipes for this years Christmas goodies.

Chocolate Peppermint Bark

2 bags of semi sweet chocolate chips
1 bag of Andes Peppermint Crunch baking chips
3 Peppermint candy cane's crushed

Method:
On a double boil melt the semi sweet chocolate chips, with the peppermint baking chips. On a baking sheet put on wax paper pour the melted chocolate peppermint evenly. Sprinkle on the crushed peppermint. Put in fridge and let it chill for 1 hour.
Tip: you can substitute the peppermint crunch baking chips with Creme de'Menthe baking chips. On the top put on chopped walnuts.

Christmas Wreath

40 big marshmallows
4 Tlb of butter
6 cups of rice crispy
green food coloring
red gum drops

Method:
Butter an angle food cake pan. Make your basic rice crispy treat as in melt the butter on medium heat then melt the marshmallows now put in the green food coloring. Judge on how dark you want the green to be, yourself. Now put in the 6 cups of rice crispy mix well. Now put the hole mixture into the buttered angle food cake pan next place the red gum drops on. After set up put on plate and Enjoy!!!

Pumpkin Pie From the Pumpkin

Ok, I now know how to make a pumpkin pie from the pumpkin. This is so cool, and very good. Unfortunately it takes all day, but worth it. This is if you are in the Martha Stewart mood. I didn't make this, my brother did and he did a very good job.

Grow or purchase “Cooking” pumpkins, such as sugar, sweet, or pie pumpkins, to make your pumpkin pie from scratch. Carving pumpkins don't work as well in the baking process, because they have less flavor and a less desirable texture.

Prep 1-3/4 hours. Bake 1 hour. Stand 1 hour. Oven at 375


Pumpkin Pie From Scratch

1 5-6 pounds of sweet pumpkin
2 cups of pumpkin puree
2/3 cup sugar
1 ½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
3 slightly beaten eggs
1 5 ounce can evaporated milk
½ cup half-and-half or light cream

Method to make the pumpkin puree from the pumpkin:

Preheat oven to 375 f. Scrub pumpkin thoroughly. Halve pumpkin and remove fibrous strings, seeds, and stem. Cut into 5-inch pieces. Arrange pieces in a single layer, skin side up in a foil lined large roasting pan. Cover and bake for 1- ½ hours or until tender. Cool. Scrape pulp from rind. Place in a food processor, in batches, if necessary. Cover and process until smooth. Place puree in a 100% cotton cheesecloth- lined fine-mesh sieve. (use a double thickness of cheesecloth). Allow to stand for 1 hour to drain. Press lightly to remove any additional liquid (discard liquid). Reserve 2 cups puree for the pie. (refrigerate any remaining puree in an airtight container up to 3 days or freeze up to 6 months).

Method for the Pumpkin Pie: 

In a large bowl, stir together the 2 cups of pumpkin puree, sugar, cinnamon, nutmeg, and ginger. Using a whisk, beat in eggs, milk, and half-and-half until combined. Pour into pastry-lined pie plate. (you may need 2 pie plate) To prevent over browning, cover the edge of pie with foil. Bake for 25-35 minutes, or more until a knife that you inserted near the center comes out clean. Cool on a wire rack. If desired, top each serving with Whipped cream and sprinkle with additional cinnamon. Makes about 8 servings. Or according to my mother she likes to bake the pie at 425 for 15 minutes then turn down the over to 350 for 45-60 minutes. All in honestly, I like to bake the pie at 375 for 25-35 minutes. The crust doesn't burn, and the pie isn't dry.

The 5 Minute Chocolate mug cake

The most dangerous cake in the world! Why? You are only 5 minute away form chocolate cake night or day!!!
4 Tbl of flour
4 Tbl of sugar
2 Tbl of baking cocoa
1 egg
3 Tbl milk
3 Tbl oil
3 Tbl of chocolate chips (optional)
a small splash of vanilla
1 coffee mug

Add dry ingredients to mug, and mix well. Add the egg mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (optional) and vanilla, and mix again.

put your mug in the microwave and cook for 3 minutes at 1000 watts. the will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out on to a plate if desired. EAT (this can sever 2 if you want to feel slightly more virtuous.)
