Pina Colada Cake

Ok on Pinterest I keep seeing a Pina Colada Cake. What makes the cake is the icing/topping.  The ones that are on Pinterest have the pineapple in the cake. Hmmmmm. This is my families recipe.

1 yellow cake mix
1 can of chunky pineapple drained
1 package of instant sugar free Banana pudding
1 large tub of Cool Whip/or a small box of whipping cream; whipped
1 package of coconut

Directions:

Mix up the cake according to directions. In a 13-9 in cake pan spray with cooking spray and sprinkle 1/2 cup coconut on the bottom. Pore the cake mix in the pan on top of the coconut, bake according to directions.

In a large bowl pore the Cool Whip/or Whipping Cream, mix the dry instant sugar free Banana pudding together, with drained pineapple chunks. Pore over the top of the cooled cake. Last sprinkle the rest of the coconut on top. Remember refrigerate any left overs, because of the milk.


Ok, I have forgotten to put on a tip for this cake. Tip: Instead of using veggie oil like it says on the back of the yellow cake mix box, my family and I would put in Coconut oil. By doing that it changed the texture of the cake and made it taste amazing!

FHE Activity

I was surprised that ALL of the programs was taken. The people in my ward would usually take a program, read it, and then put it back on the table after the meeting. This time there was not a program put back.  I put on a scripture chase on the program, called Scripture Cookies. The idea of this scripture chase is to look up each scripture and you will find the ingredients for Scripture Cookies. Some of the clues are subtle, so check the list of ingredients on the bottom. This is the recipe:
  • 3/4 cup "The words of his mouth were smoother than                  " (Ps 55:21)
  • 1/3 cup "Come unto me all ye ends of the earth, buy                     and honey" (2Ne 26:25)
  • 1 1/2 cups "To what purpose cometh there to me......the                         from a far country? (Jer 6:20)
  • 2 "As one gathereth            that are left, have I gathered all the earth" (Isa 10:14)
  • 2 cups "And Solomon's provision for one day was thirty measures of fine                (1 Kings 4:22)
  • 1 teaspoon "Take thou also unto thee principal spices,... and of sweet               half so much (Ex 30:23)
  • 1 teaspoon  "Ye are the              of the earth" (Matt 5:13)
  • 1/2 teaspoon "The kingdom of heaven is like unto                 (Matt13:33)
  • 3 cup "Nevertheless,....                        for the horse" (D&C 89:17)
  • 1 cup "And they gave him....two cluster of                 " (1 Sam 30:12)

  1. Beat first four ingredients together
  2. Mix in remaining ingredients
  3. Drop by teaspoonfuls onto greased cookies sheet
  4. Bake at 350 F (175 C) for 15 Minutes

Answer: Butter, Milk, Sugar, Eggs, Flour, Cinnamon, Salt, Baking Soda, Oats, and Raisins.

I did two things different to this recipe. I took out the raisins and put in chocolate chips. I am not a fan of raisins, I really hate raisins. The chocolate chips, I thought made the cookies. And I took out the Salt
